Banquet chef Needed to work in Canada by Peninsula Ridge Estates Winery
We are seeking an experienced and talented Banquet Chef to oversee the preparation and execution of large-scale banquet events. The Banquet Chef will be responsible for managing the kitchen staff, ensuring the preparation of high-quality meals, and ensuring that all food served at events meets company standards. This role requires a strong ability to work under pressure, excellent organizational skills, and a passion for creating exceptional culinary experiences.

Key Responsibilities:
- Plan, prepare, and execute a variety of banquet menus for events, including weddings, corporate events, parties, and other large gatherings.
- Collaborate with the event planning team and clients to understand menu preferences, dietary restrictions, and other event details.
- Supervise, train, and mentor kitchen staff, ensuring they follow proper cooking procedures, food safety standards, and sanitation guidelines.
- Oversee the preparation and cooking of all dishes, ensuring consistency, quality, and presentation at all times.
- Manage inventory, order supplies, and ensure that all ingredients and kitchen equipment are well-stocked and functioning properly.
- Ensure that all meals are prepared and served on time, meeting client expectations and event timelines.
- Coordinate with front-of-house staff to ensure smooth service and timely delivery of food.
- Maintain cleanliness and organization of the kitchen, including proper storage of food items and equipment.
- Follow and enforce food safety standards, including proper handling, storage, and labeling of ingredients.
- Monitor and manage kitchen labor costs, ensuring that the banquet team is staffed appropriately for each event.
- Handle special requests, dietary restrictions, and last-minute changes to event menus with professionalism and flexibility.
- Assist with menu development and costing for upcoming events and special functions.
- Work with other chefs and kitchen staff to innovate and improve menu offerings.
Tasks
- Estimate amount and costs of supplies and food items
- Maintain records of food costs, consumption, sales and inventory
- Demonstrate new cooking techniques and new equipment to cooking staff
- Supervise activities of specialist chefs, chefs, cooks and other kitchen workers
- Create new recipes
- Instruct cooks in preparation, cooking, garnishing and presentation of food
- Prepare and cook complete meals and specialty foods for events such as banquets
- Supervise cooks and other kitchen staff
- Prepare and cook food on a regular basis, or for special guests or functions
- Prepare and cook meals or specialty foods
- Plan menus and ensure food meets quality standards
- Prepare dishes for customers with food allergies or intolerances
- Train staff in preparation, cooking and handling of food
Qualifications:
- Proven experience as a Banquet Chef, Catering Chef, or in a similar culinary leadership role.
- Strong knowledge of banquet cooking, large-scale food preparation, and kitchen management.
- Ability to create and execute diverse and high-quality banquet menus.
- Excellent leadership and communication skills to manage a team of kitchen staff.
- Knowledge of food safety and sanitation practices.
- Ability to work well under pressure and handle large-volume food production while maintaining quality.
- Creative and flexible, able to adapt to client requests and dietary restrictions.
- Strong organizational and time management skills.
- Ability to manage multiple events simultaneously while ensuring high-quality service and food.
Preferred Qualifications:
- Culinary degree or formal culinary training is a plus.
- Experience in high-volume or luxury hotel banquet kitchens.
- Knowledge of current food trends and innovative cooking techniques.
- Ability to work with specialized dietary needs (e.g., vegan, gluten-free, etc.).
Physical Requirements:
- Ability to work in a fast-paced, high-pressure environment for extended periods.
- Ability to lift and carry heavy items (e.g., large pots, trays of food, etc.).
- Ability to stand for long periods and perform physical tasks in the kitchen.
