Key Responsibilities:
- Meat Preparation and Cutting:
- Prepare and cut meat products according to customer specifications or company standards.
- Operate and maintain cutting tools and equipment, such as knives, saws, and grinders.
- Trim, debone, and portion meat cuts, ensuring proper presentation and quality.
- Product Handling and Packaging:
- Weigh, package, and label meat products for sale, ensuring that all packaging meets health and safety regulations.
- Store meat products at the correct temperatures to maintain freshness and prevent spoilage.
- Monitor inventory levels and rotate stock to ensure that older products are used first (FIFO method).
- Customer Service:
- Assist customers by providing information about meat cuts, cooking methods, and product recommendations.
- Take special orders and customize meat products to meet specific customer needs.
- Handle customer inquiries, complaints, and returns professionally and courteously.
- Sanitation and Safety:
- Maintain a clean and organized work area, including proper sanitation of tools, equipment, and surfaces.
- Follow food safety and hygiene procedures to prevent contamination and ensure product safety.
- Adhere to all health and safety regulations, including proper handling and disposal of waste.
- Inventory Management:
- Monitor and manage inventory of meat products, supplies, and equipment.
- Assist with ordering and receiving supplies, ensuring that products are in good condition upon arrival.
- Conduct regular stock checks and report any discrepancies or issues to management.
- Quality Control:
- Inspect meat products for quality, freshness, and proper handling.
- Ensure that all meat products meet company standards and regulatory requirements.
- Address and resolve any issues related to product quality or safety.
- Training and Development:
- Stay informed about industry trends, new meat products, and cutting techniques.
- Participate in training sessions and professional development opportunities as required.
Tasks
- Clean meats to prepare for processing or cutting
- Cut carcasses, sides and quarters
- Cut, trim and prepare standard cuts of meat
- Wrap and package prepared meats
- Remove bones from meat
- Cut poultry into parts
- Sell meats to customers
- Supervise other butchers, meat cutters and fishmongers
- Slice cooked meats
- Shape, lace and tie roasts, other meats, poultry and seafood
Qualifications:
- Education and Experience: High school diploma or equivalent required; previous experience as a butcher or in a similar role is preferred. Formal training in meat cutting or food handling is a plus.
- Skills: Proficiency in meat cutting and preparation, strong attention to detail, and excellent customer service skills. Ability to operate and maintain butcher tools and equipment safely.
- Certifications: Food safety certification (e.g., ServSafe) or other relevant certifications may be required depending on local regulations.
Physical Requirements:
- Ability to lift and carry heavy meat products and equipment.
- Comfort with standing for extended periods and performing physical tasks.
- Ability to work in varying temperature conditions, including cold environments.
Working Conditions:
- Work is performed in a retail or wholesale setting, which may include exposure to meat processing equipment and varying temperatures.
- The role may involve working evenings, weekends, and holidays depending on store hours and customer demand.
